SO you may or may not know
of my ridiculous love for bacon.
I am constantly getting bacon bits
posted to my Facebook page....
and I'm not complaining about it.
( Although you know
the one talking about all the bacon
is probably not the one GETTING all the bacon)
That's a discussion for another day.
We'll put pumpkin on the list
with chocolate, coffee and bacon
which make me a
If there was such a thing.
( .......and I think there should be!)
Took a little of the mashed orange stuff and
added it to chili
and I seriously have to say it was fantastic!
It might even be better with bacon bits on top!
SO if you asked me for the recipe here is mine.
You could easily add a whole or half a small can to your own chili and I am sure it would be delightful!
Pumpkin Chili from Under the Bus
3 tablespoons chili powder
3 teaspoons ground cumin
3 teaspoons oregano
2 teaspoons powdered garlic
1-2 teaspoons brown sugar
1 cup chopped onion- browned
1/2 cup whole corn or small can
1 small can chopped green chili's
1/2 small can tomato paste
1 large can chopped tomato's
1 small can pumpkin
1 can small red beans or black beans( less skin for the kids)
1 -2 cups beef stock
1 can/bottle beer ( I use Coronoa or Octoberfest)
1-2 pounds fresh ground beef
( I use 1 pound beef or 1 pound beef one pound vegetarian crumbles. depending on how many I am feeding and just add extra liquid as needed.)
Salt, black pepper and cayenne to taste
( we like it hot!)
shredded cheese/green onions/sour cream/chips
to your liking!
Brown your ground beef and drain fat.
Add all the other ingredients back into the pan with the beef and stir and simmer for at least an hour.
We like it a bit soupy so add more or less liquid to your taste.
Spicy sweet for us there wasn't much left over.
I am thinking of adding cubed pumpkin
or butternut squash the next time.
Let me know if you try it!
Well if it's really bad don't let me know lol.
Happy Wednesday! Patty
